Mea ʻOno Huli ʻŌhiʻa ʻAi (Mountain Apple Upside Down Cake)

1 recipe yellow cake mix
coconut milk
coconut oil
2 cups cooked, seasoned sliced mountain apples and syrup
slow cooker

Mix the yellow cake batter according to directions, substituting coconut milk for the liquid and coconut oil for the vegetable oil.

While mixing the batter, add a bit of the syrup.

Grease a round cake pan and place the mountain apple slices in it.

Pour in just enough batter to cover the mountain apples. Drizzle syrup over the batter. Pour in another thin layer of batter and drizzle in more syrup. Repeat until the batter and syrup are used up.

Place a roasting rack in a slow cooker and add water to cover the rack. Place the cake in the slow cooker, cover, and cook on high for three hours.

When cooked, remove the cake and allow it to cool. Invert it on a platter or cake dish.

This is excellent served with sour cream, whipped cream, ice cream, and/or coffee!
